Peach Sorbet (made with Cardinal Farms Peaches)

Posted on July 22, 2014 Written by Nibby Priest

Makes about fourteen 1/2- cup servings

3/4 Cup of Granulated Sugar
3/4 Cup of Water
2 1/2 Pounds of Peeled and sliced Peaches
2/3 Cup tangerine or orange juice (we used fresh squeezed oranges)
1 Tablespoon Corn Syrup  (the stuff that’s killing us!)

Place sugar and water in a 1 1/2 quart saucepan.  Bring to a boil over medium heat, reduce heat to medium and cook until the sugar is completely dissolved to make a simple syrup- you will have 1 1/4 cups simple syrup. Transfer to a bowl and cool completely.

Place the peach slices/cubes or chunks into a blender and slightly puree.  You should end up with 6 cups of Peach Puree.  Stir in the tangerine or orange juice, corn syrup and cooled simple syrup.  Cover and chill for 2 hours or longer.

Cuisinart ICE-30BC Pure Indulgence 2-Quart Automatic Frozen Yogurt, Sorbet, and Ice Cream MakerTurn on the Cuisinart Ice Cream maker and pour the mixture into the freezer bowl, and let mix until thickened, about 20 to 25 minutes.  The sorbet will have a soft, slushy texture , similar to a freshly scooped Italian ice, If a firmer consistency is desired, transfer the sorbet to an airtight container and place in freezer for about 2 hours. Remove from freezer about 15 minutes before serving.

– I trust you will enjoy this recipe as much as I have.  This year we have been blessed with bountiful peaches.  Let me know how it turns out when you make this recipe.

My First Toastmasters Speech

Posted on December 5, 2012 Written by Nibby Priest

The first of November we started trying to organize a Toastmaster group here in Henderson KY. I have nothing but praise to say about this organization and those that are working to get Henderson KY Toastmasters a fully chartered chapter.

Thank you Louann Clark for all your efforts in getting this club going in our community.  We need 20 members to charter and we are very close to that goal.

I volunteered on November 28, 2012 to give my ice breaker speech. In Toastmasters, the Ice Breaker speech is usually the first one people do, and it is one where you talk about yourself and your life.

If you know me well, you know that I love Dolly Parton- so my speech was about her but really not- it was about me!

“The Day I Met Dolly Parton”

1stToastmastersSpeech-2012-11-28It was spring of 1986 and the opening weekend of Dollywood – my senior year at Eastern Kentucky University in Richmond Kentucky.   I had earlier attended and graduated from our Henderson Community College with an associate of arts degree in 1984 and prior to that a 1982 alumni Henderson County Senior High. Ok so you don’t have to do the math, I am 48 years old.

That spring weekend in April of 1986 was a beautiful weekend.  It was the weekend before the last finals of my college career.

I arrived in Pigeon Forge TN early that Friday afternoon to grab a good spot to see Dolly, who was giving a benefit concert that evening.  I did manage to study some and I found myself shoving my books under the seat just moments before she came on the stage.

Well, in case you haven’t figured it out yet –I have a lifelong admiration for the superstar Dolly Parton.   I like her not only because of who she is or her music but how she handles herself and shows genuine kindness.  Like one of her quotes say-  she has a brain under that blonde wig and a heart under those boobs!

I have met Dolly several times over the years and always am taken by her gentleness and her quick wit.

When it came my turn to greet her one time at a benefactor luncheon, she saw my name tag and asked, “Where did you get a name like Nibby?”  I knew she didn’t have a long time, and I offered her a quick response, and since Dolly wanted to know I will share it with you all as well.

My parents Norris and Mary Elizabeth Priest were married in August of 1958 at the First Baptist Church –the same one I am proud to say that I was raised in.

They moved to an apartment in the 300 block of N Main St. They were quickly told of the McLaughlin spinster sisters that lived next door and that they were sometimes cranky and hard to get along with.

That didn’t bother my parents.

They heard  that one of the sister’s Miss Elizabeth was having a birthday. My mother as a young bride baked Miss Elizabeth a birthday cake.  The rest was history.  My parents quickly became the best of friends to the old maid sisters.  Miss Elizabeth died shortly after that and left Miss Mable.  Later, my mother became pregnant with me.  Miss Mable was so excited.  Her middle name was Nisbet and my parents gave me her middle name.  She before I was born shorten the name to just plain Nibby.  Over the years the name like my personality has been unusual and memorable.  Even Dolly thought it was unusual.

In 1988 personal computers were the rage. I had the Computery a personal and business computer store here in our downtown.  Many Henderson people had their first encounter with PC’s  through that store. I taught over 2000 people from 1986 to 1994 how to use such software as WordPrefect  and Lotus 1-2-3 at HCC.

My interests are quite varied.  The past few years I have been doing a lot of work with social media.  Twitter is my favorite.  Through social media, I have met a lot of nice people and one of them is with us here today,  Becky Durham.  Social media has taught me to think some before I speak.  Though social media I have become more aware of our community Henderson, and all that it has to offer.  I have become a community advocate and voice for all things Henderson and of the downtown area.

I really enjoy bicycles and enjoy riding every chance I get.   I am a bicycle to work commuter– I know I just have less than two-tenths of a mile commute if that.

I enjoy food and good cooking.  The past two years I have participated in the areas only CSA (Community Supported Agriculture).

I built a unique home on the downtown river front in 2004. Downtown living is the best, I feel  that in the next few years, there is going to be huge movement to downtown communities from subdivision dwellers.

My faith community means a lot to me.  I am staff organist and member of Community Baptist Church.  I have had an organ playing job in various churches for over 28 years.

I sell insurance- auto homeowners business life and health.  I work in my family insurance agency Vaughn Insurance.   My college degree from Eastern Kentucky University is in Insurance.

My family also owns the L&N Bed and Breakfast. Both businesses are on North Main Street.

I have been involved in numerous organizations in Henderson.  OVAL, DHP, Chamber, Friends of the Library. In 2007 my family and I were awarded the Heart of Downtown Award from Downtown Henderson Partnership.

My biggest goal right now is to strategic plan for the insurance agency’s future and to encourage young professionals that Henderson Kentucky is a  place to put down your roots and stay.

A question that Dolly Parton gets often is “What do you want people to say about you 100 years from now?”  in her countrified voice, she quips “’dang, doesn’t she look good for her age?”   I don’t know if I want to “look good at 100” but I sure do hope Henderson Kentucky does.

Burgoo Benefiting Riverview School 2012

Posted on February 24, 2012 Written by Nibby Priest

Burgoo is very popular in Henderson Kentucky.  Saturday March 10, 2012 Riverview School will be selling Burgoo as a benefit and fundraiser.

This Burgoo must be pre-ordered.  Call ahead to reserve a bucket.  270.827.3674 or email rvschool@hotmail.com.

What is Burgoo?

[tentblogger-youtube QgFxZ_tX-VI]

Read A Regional Tradition: Burgoo.  Another site  burgoo.info does a good job explaining as well.

Burgoo is popular in Henderson Kentucky that is for sure.  For the past few years Burgoo has been so popular that they sell out a week before the date of the Burgoo.  If you want some be sure to reserve your gallon now!  I have!

Each kettle makes at least 25 gallons and sometimes more.  A long time Supporter of the Riverview Burgoo Connie Flint Mays told me that the making of the Burgoo has become harder since many of the places that used to donate food to benefits  are no longer in business.  Flint-May’s said “businesses like Frank G Schmitt and C L Frank Produce was always generous and gracious when it came to Riverview Burgoo time.”  Personally, I think it is a shame that big box stores like the Wal-Mart’s of the world cannot fill the gaps like these businesses did in the past.

Not only does Riverview School make good Burgoo, but they own the 10 kettles that are used all over Henderson County for fundraisers.

Pre-sale patrons can pick up from 10-11:30am. Since this is a pre-sale only Burgoo and all the tickets have been sold there is a possibility after 11:00 am any extra will be available to the public.

For more information contact Riverview School at 270.827.3674.   They sell the Burgoo for $15 per gallon, and that includes a container.  That is  a very fair price, and I think is under priced.  I told Connie without a doubt, they should go to $20 a gallon next Burgoo and be sure to put me on the list of people to call and sell me a ticket.

I don’t have one for this Burgoo and really don’t want to stand in line to get some.  So this Saturday I will be Burgoo -less! For those that got some ENJOY!  It’s good stuff!

Tell me about your experience eating or making Kentucky Burgoo?

Starbucks in Henderson KY

Posted on February 22, 2012 Written by Nibby Priest

Inside information told me yesterday that the real estate people for Starbucks were in the area the past few weeks and did look at locations in Henderson KY but have put off opening any store in our area for at least two to three years.  A lot having to do with I69 highway development I was told.

This means if you are thinking of opening a full-fledged official coffee-house in Henderson KY you stand a good chance of making it if your product is good. You should not have to fear Starbucks coming in and taking your business away.

I would encourage anyone thinking of a venture like this to go for it. Our community is ripe for an establishment like this. Henderson Kentucky people are looking for a place to be and be seen in a coffee shop type environment. The need is great. It doesn’t have to be downtown either-anywhere in our community would be nice.

We have three coffee establishments in Henderson Kentucky area that presently serve as a coffee destination.

Bridgeview Coffee at the corner of 2nd and N Green is a drive-through coffee place. They really can’t be called a coffee-house because they just have outdoor seating for two and a place for you to park your bicycle.  I do have to say that their product is consistently good and price is reasonable.  I buy coffee from them frequently.  I have a problem with the Styrofoam cups that they serve custom coffee drinks. They should use paper cups.   I’m not a huge fan of the drive through anything-, but I do  use this service when I want coffee in downtown Henderson and not on my bicycle. Their product would do quite well in a location that would allow inside seating. Just this morning I personally witnessed cars wrapped around this small kiosk at 8:00 am in line for coffee.  Their business is booming.

Planters Coffee House is a long time mainly lunch destination than a coffee-house  or coffee shop in downtown Henderson KY. They are open during the mornings and are trying out new evening venues and serve beer and wine.

The Thirst Aid Station at the Elm Street entrance to Methodist Hospital is good too.  Consistently they serve a good cup of official Starbucks. I think though people are having a hard time grasping going to the local hospital to get a cup of good java. I hope they stay.  It is really close to my house.  They have real potential of making a coffee destination. Read Methodist Hospital press release about The Thirst Aid Station.

Another tidbit of information in the Starbucks Evansville IN market is that they plan on enlarging the Green River Road Store (#9759) into the former Integra Bank location. With this, they will be able to offer drive through service.   Starbuck’s is also looking to  bring back a west side Starbucks location.  They  closed a west side Evansville IN location a few years ago.

I too was told that in order for a community to have a local Starbucks they need to have either a Target or Kroger in the vicinity.  Have you heard that?

What would you like to see as a coffee destination in Henderson Kentucky?
